Apple and Oat Muffins


  • ok1 cup (150g) self-raising flour
  • ok1 cup (150g) plain flour
  • ok1 1/2 teaspoons baking powder
  • ok3/4 cup tightly packed brown sugar
  • ok1/2 cup rolled oats, plus 1 tablespoon extra
  • ok1 1/2 cups (375ml) yoghurt, at room temperature
  • ok½ tsp vanilla essence
  • ok2 eggs, lightly beaten
  • ok100ml light olive oil
  • ok1 green apple, thinly sliced

Let's Cook

  1. 1Preheat oven to 180°C. Grease muffin pans with cooking spray.
  2. 2Mix flour and baking powder together with sugar and oats.
  3. 3Whisk yoghurt, eggs, vanilla and oil together.
  4. 4Divide mixture evenly into muffin pans.
  5. 5Gently push slices of apple into mixture until covered and sprinkle with extra rolled oats.
  6. 6Bake for 25 minutes and serve warm.
